When I started on my low-carb zero sugar journey the thing I found to be the hardest was to not have pasta. I love love love pasta. Then my gnocchi was also taken away – no potatoes. Heartbreaking stuff. As I have gone on with this journey I have relaxed a bit and so I allow myself a bit of flour every now and then. As long as the flour is gluten-free that is. That means I can have something that resembles pasta and gnocchi!

Gnudi is an Italian dish that is made of ricotta and spinach. It does contain flour, but in very small quantities. And lots of vegetables. So I feel better about the small amount of flour. We don’t eat this often, but when we do it feels like a real treat.

You can play around with the sauces, almost anything works. Of course the gnudi themselves are very subtle, so if you do want to experiment with sauces I would steer clear of anything too overpowering.

Spinach & ricotta gnudi

Servings: 4

Ingredients:

  • 20g fresh basil
  • 100g baby or English spinach
  • 250g ricotta
  • 125g grated parmesan
  • 1 large egg
  • zest of 1 lemon
  • salt and freshly ground black pepper
  • 75g cake flour plus extra for dusting
  • 30ml olive oil

Sauce:

  • 60ml butter
  • 100g baby or English spinach
  • 250g sliced brown mushrooms
  • 125g bacon bits or offcuts
  • juice of 1 lemon
  • extra parmesan for serving
  • baby greens, sweet pea tendrils or herbs for serving

Instructions:

  1. Place basil and spinach in a bowl, cover with boiling water and wilt for a minute. Drain and squeeze out excess water.
  2. Place leaves in food processor with half the ricotta and all the parmesan. Blitz to form a paste.
  3. Combine paste with remaining ricotta, egg, zest and seasoning. Combine well.
  4. Fold in flour, ensuring there are no lumps.
  5. Dust a baking tray with flour. Place gnudi mixture in a piping bag and pie long strips onto tray. Cover and chill in the fridge for 30 min.
  6. Cut strips into 3cm-long pieces to form gnudi. Drop gnudi into pot of boiling, salted water and cook until they float to the surface. Remove with a slotted spoon.
  7. Heat oil in a large pan. Fry the mushrooms and bacon until cooked. Add the gnudi and fry until golden. Add butter, spinach and cook until butter is brown and bubbling. Add lemon juice and adjust seasoning.
  8. Serve immediately topped with herbs and extra parmesan.
