Both my kids love bananas, but as Murphy would want it whenever we buy a big box of bananas they all of a sudden refuse to eat them. So we always sit with a few that get too ripe. Because we try to limit sugar and refined carbs as far as possible, I struggled to use them for cooking and ended up throwing them away. This week, again sitting with a bunch of over-ripe bananas, decided to try my hand at baking banana bread. I used a recipe I found in one of my older recipe books, and simply adapted the ingredients and amounts. The results were very satisfactory, especially Husband loved the loaf! The kids weren't that keen, so for them I will try some muffins next time. The loaf was so nice that I want to share the recipe with you. If you are fine using regular flour, then just use a cup of that instead of the coconut flour. The rest of the ingredients can stay as is. The buttermilk makes the loaf rich and moist, and the butter ensures a fine crumb and texture. The seeds give a bit of crunch while increasing the nutritional value, and who doesn't love cinnamon with bananas? You can replace the xylitol with another sweetner of choice, just remember to increase or decrease amounts based on sweetness.

Banana Bread

Makes: 1 loaf

Ingredients:
  • 3 over-ripe bananas, finely mashed
  • 1 cup coconut flour
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup xylitol
  • 1 tsp vanilla essence
  • 90g butter, melted
  • 1 cup buttermilk or maas
  • 2 eggs
  • 1/2 cup mixed seeds and/or nuts, chopped
  • 2 tsp cinnamon powder

Instructions:
  1. Preheat oven to 180ÂșC
  2. Butter or spray a bread pan
  3. Mix all of the wet ingredients together
  4. Sift all of the dry ingredients together
  5. Add the dry to the wet and mix quickly. Careful of over mixing
  6. Pour mixture into prepared pan and bake for 40 to 50min, or until golden
  7. Serve with real butter
