{Recipe} Treats: Coffee gummies [LCHF, Zero sugar]

I say kids, but this recipe is pleasing to kids and adults alike. You can tweak how strong (or weak) you want the coffee, add more or less of the sweetener, even increase the gelatin content for a more springy gummy. The recipe is very forgiving. You can even add flavoured syrups if you desire! I don't make these often, as we try and steer clear of sweets - even the ones with no sugar. But when I do make them they do not last long! Try is, mix it up a bit, and let me know how it went!

Coffee gummies

Zero sugar, LCHF

Makes: 30 gummies

Ingredients:
  • 2 tsp instant coffee (I use decaf so the kids can also have some of the gummies)
  • 1 cup boiling water
  • 2 tsp gelatin powder sprinkled over 50ml cold water
  • 2 tsp xylitol or sweetener of choice
  • 30ml cream

Instructions:
  1. Dissolve the coffee in the cup of water. Add the hydrated gelatin and stir until dissolved
  2. Add the xylitol or other sweetener and stir well
  3. Pour in the cream and stir
  4. Pour into your chosen molds (I used chocolate molds)
  5. Place in fridge overnight
