{Recipe} Peanut butter cookies [Zero sugar]

My kids absolutely adore peanut butter. They eat it straight out of the jar... And they love cookies (show me a kid who doesn't). The inspiration for this recipe was found on Pinterest - one of those days where the kids kept bugging me for something nice to eat, and me looking for something so easy that I could do it blindfolded.... The recipe I found was my saving grace. I adapted the original a bit, increasing the peanut butter, adding baking powder for a bit of lift, and adding a bit of xylitol. 

This week I made them again and decided that the next time I bake them I am going to change the recipe yet again. I want to experiment with adding in a liquid such as buttermilk, and maybe some coconut flour just to bind the cookie. Sometimes they are a bit dry, so need to fix that problem.

In the meantime, here is the recipe for my peanut butter cookies, flourless, sugarless, guiltless!

Peanut butter cookies

GAPS, Paleo, Zero sugar

Makes: 1 loaf

Ingredients:
  • 1 whole egg
  • 1 cup peanut butter (I use the sugarless & saltless kind)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbs xylitol

Instructions:
  1. Preheat oven to 180ÂșC
  2. Butter or spray a cookie sheet
  3. Mix all of the ingredients together
  4. Form little balls with the mixture, placing them on the prepared sheet about 3cm apart. Using a fork, flatten the balls a little bit to resemble a traditional cookie. Bake for 15 to 20min, or until golden
